WARM BALSAMIC GREEN BEANS with WALLA WALLA SWEET ONION MUSTARD
TOPPING:
½ cup Slivered Almonds
1 Tbl Butter
1 Tbl Sugar
BEANS:
3 Tbl Butter
¼ Cup Onion, chopped
2 tsp Garlic, finely chopped
1 lb Fresh Green Beans, trimmed and cut in half
1 tsp Salt
½ tsp Pepper
SAUCE:
2 Tbl Honey
1 Tbl Balsamic Vinegar
1½ tsp Walla Walla Sweet Onion Mustard w/Red Bell Peppers
Directions
TOAST almonds in an 8-inch nonstick skillet with butter and sugar over medium-low heat until golden and caramelized (7 to 10 minutes). Spread onto waxed paper to cool.
BRING a large pot of water to a boil over medium heat. Add the beans and blanch them for 2 minutes. Immediately remove the beans from the water and add them to an ice bath to stop the cooking process. Drain.
MIX honey, vinegar & mustard in small bowl and set aside.
COOK onions and garlic in a 12-inch skillet with 3 tablespoons butter until softened (3 to 5 minutes). Add green beans, salt and pepper; cook until crispy tender (8 to 10 minutes). Stir in honey, vinegar, mustard mixture; continue cooking until sauce thickens and beans are well coated (2 to 3 minutes).
PLACE beans into serving bowl; top with caramelized almonds.
